Pasta Fagioli

ingredients :

1 package of your favourite Duso’s Tortellini Pasta (we suggest you try our Four Cheese Tortellini)

1 tbsp. extra virgin olive oil

1 clove garlic (minced)

1 large onion (chopped)

28oz can tomatoes (broken up)

1 package Duso’s Traditional Tomato Sauce

Salt and pepper

1/2 tsp. dry leave basil, crumbled

1/2 tsp. dry oregano

2 tbsp. fresh chopped parsley

15oz kidney beans

1/4 cup fresh Parmesan cheese

Method :

1. Cook pasta according to directions. Strain and set aside.

2. Heat olive oil in heavy 5 quart pot and saute onion and garlic until onion is tender and golden (about 5 min). Add tomatoes, tomato sauce, spices and salt and pepper (to taste). Bring to a boil, reduce heat and simmer for 25 min.

3. Add cooked pasta and beans. Simmer for 3 minutes (just to heat pasta and beans). Serve in bowls and garnish with parmesan cheese.
